Day Two: Valletta's tastiest Treats
Today you will travel to Valletta, Malta’s incredible UNESCO-listed medieval capital. Take a private walking tour with your guide, starting at Upper Barrakka Gardens (once the private exercise grounds of the Knights of St John). These colonnaded gardens have the best views over the harbour and the famous saluting battery (a battery of cannons that still fires daily salutes). Enjoy your surroundings with local soft drinks and pastizzi (savoury pastries), before continuing on with your exploration. Along the way, you’ll stop for a tasting of Cisk, the local beer, and for lunch at Rampila. Situated in the historic city ramparts, its cave dining room and pretty terrace are the perfect places to absorb Valletta’s history over an excellent meal. Suitably refreshed, you’ll continue the ornate St John Co-Cathedral, known as the crown jewel of Valletta and home to Caravaggio’s Beheading of St John. Finish your day by exploring Casa Rocca Piccola, a 16th-century palace that’s still an antiques-laden family home, complete with World War II air raid shelters.

Day Three: Grandma's finest food
After breakfast, you will be transferred to the little village of Dingli, in the north of the island, for a cookery class on the rambling, rural Diar Il-Bniet estate. Alongside a restaurant famed for its rural Maltese food, the estate has a farmhouse kitchen cookery school, dedicated to secret recipes passed down by the owners’ grandmother. Using homegrown produce straight from the farm, you’ll cook a seasonal, three-course menu, finding out family stories and local traditions as you go. Savour the results with a glass of wine, and take home an apron and recipes so you can recreate the culinary magic at home. The rest of the afternoon is free to relax.
